Prep and plan phase
My Godson, Jacob, has been telling me a lot about the benefits of adopting a vegan diet. I've thought about it and done reading, and I've decided to give the vegan life a shot. If everything I've heard and read is true, I will never want to give up veganism.Today was pre-vegan prep phase 2. Phase 1 was the reading and thinking I did before now. I started gathering information yesterday. I made a shopping list, and today I did my first round of vegan shopping. I have no clue what a real life vegan menu looks like. What I've seen so far online is a very glorified view of a daily vegan diet, so I'm winging it. I may need to find some outside support for learning this lifestyle.
Tomorrow's menu will look something like this:
Breakfast - steel cut oats with almonds, raisins, cinnamon, and unsweetened vanilla almond milk
Lunch and dinner - Butternut squash coconut milk soup, chopped sesame ginger salad, fruit, sauteed chickpea/tomato/corn/onion
I can only plan for tomorrow. Hopefully with time I'll feel a little more confident about this.
