A rainy Saturday menu
Our fair city is closed down due to heavy rains and flooding. Most events in the city have been canceled, and the rescue personnel are advising all San Antonians to stay home. So, today is a good day to use up the chickpeas I made and froze last week.
Michael and I are in the mood for mashed potatoes, which is good because I don't want the half sack of potatoes to go bad. I decided to make a dual menu. Beef patties with gravy for Michael, and chickpea cutlets with vegan gravy for me. Our sides will be mashed potatoes (without dairy) and green beans, with a great salad for a starter. I'm using the recipe for Gluten-free Chickpea Cutlets from the Windy City Vegan blog. Not only are the cutlets vegan, but they're gluten-free as well.
I'm staying warm and dry in my cozy home today, and will cook, watch Netflix or Amazon Prime, and knit all day long.
